It has been a food staple in the Middle East for years because it offers an inexpensive source of low-fat protein. Bulghur (wheat berries) is a dried form of cooked wheat and therefore shortens preparation time – it only needs to be re-hydrated rather than cooked. Great for making tabouli!

How to Use:
Bulghur cooks very quickly for a whole wheat product. When boiling, simply pour boiling water over the grain and leave it to stand. Allow around 2-1/2 cups of water per 1 cup of bulghur to ensure that it swells up sufficiently. Fluff it up with a fork. Adding a little salt can help to improve the flavour. It’s also possible to use the absorption method – simply add the bulghur in a pan with other ingredients. The bulghur will absorb the water released in the cooking process and take on a unique flavour.
Storage:
Store in an air tight container in a cool, dry place, away from direct sunlight. Refrigeration recommended in warm climates.
