Raspberry Matcha Muffins

This Raspberry Matcha Muffin recipe is one of our favourites because it is easy to whip for a morning tea or afternoon snack! So simple yet amazingly delicious.


  • 1/2 cups spelt flour
  • 1/2 cups banana flour
  • 1/3 cups coconut sugar
  • 2 tsp baking powder
  • 1 tsp matcha powder
  • 1/2 a ripe banana, mashed
  • 1 tbsp rice malt syrup
  • 3/4 cup almond milk
  • 1 tsp vanilla powder
  • 1 cup frozen raspberries


  1. Preheat your oven to 180°C and grease or line a muffin tin.
  2. In a bowl, mix your flours, baking powder, matcha powder, and coconut sugar.
  3. In a separate bowl, mash the banana and mix it with the rice malt syrup, milk and vanilla.
  4. Add the raspberries to the dry mixture, coating them in the flour, then pour the dry mixture into the wet ingredients and mix until just combined.
  5. Spoon into the muffin tins and bake for 35-40 minutes or until a skewer comes out clean.
