This Raspberry Matcha Muffin recipe is one of our favourites because it is easy to whip for a morning tea or afternoon snack! So simple yet amazingly delicious.
Raspberry Matcha Muffins
Ingredients
- 1/2 cups spelt flour
- 1/2 cups banana flour
- 1/3 cups coconut sugar
- 2 tsp baking powder
- 1 tsp matcha powder
- 1/2 a ripe banana, mashed
- 1 tbsp rice malt syrup
- 3/4 cup almond milk
- 1 tsp vanilla powder
- 1 cup frozen raspberries
Methods
- Preheat your oven to 180°C and grease or line a muffin tin.
- In a bowl, mix your flours, baking powder, matcha powder, and coconut sugar.
- In a separate bowl, mash the banana and mix it with the rice malt syrup, milk and vanilla.
- Add the raspberries to the dry mixture, coating them in the flour, then pour the dry mixture into the wet ingredients and mix until just combined.
- Spoon into the muffin tins and bake for 35-40 minutes or until a skewer comes out clean.
