Easter Egg Rocky Road

This Easter themed Rocky Road is super simple to make and easily adaptable to include any of your favourite add ins. Topped with Mini solid eggs, this would be a great chopped up and given as an easter gift!

Ingredients

3 cups dark chocolate buttons
1/2 cup roasted peanuts, (or any nut you prefer- Almonds, Cashews or Macadamias would work well. You could also add in some dried fruit- Sour Cherries or Cranberries would give a bit of tang)
1 cup mini marshmallows
2 cups mini Easter eggs- You could use a combo of Dark, Milk and White eggs

Methods

  1. Grease and line an 8-inch square pan with baking paper.
  2. Place chocolate in a large, heatproof bowl, Melt chocolate in the microwave, stirring every 20 seconds, until smooth and creamy.
  3. Add peanuts (or other add ins that you like), marshmallows and two thirds of the mini Easter eggs to chocolate and stir until everything is coated in chocolate.
  4. Pour chocolate mixture into prepared tin and spread out until into one smooth layer. Press the rest of the mini Easter eggs on top while the chocolate is still wet. Refrigerate for two hours or until the chocolate is set.
  5. Cut into small squares and serve. Store rocky road in the fridge in an airtight container.
