Warm up with this easy to make healing chicken soup. This flavourful, immune boosting and nourishing recipe will become your regular go-to for winter meals. Change this up from a chicken soup to a veggie soup by swapping the chicken with seasonal vegetables and our vegetable broth powder. To make a heartier meal, add brown rice or wholesome pasta.
Chicken Soup For Wellness
Ingredients
- 2 Tbsp organic olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 2 carrots, washed and cubed
- 2 celery sticks, washed and chopped
- 1 tsp organic turmeric powder
- 1 tsp ground cumin powder
- 1 tsp ginger powder
- 2Â bay leaves
- 1 pinch of cracked black pepper
- 2 pinches of sea salt (plus more to taste)
- Good splash of organic apple cider vinegar (about 1 Tbsp)
- 2 cups cooked chicken, shredded
- 1.5 litres water
- 500ml organic chicken bone broth base (500ml hot water with 4 tbsp organic chicken bone broth powder) – Substitute with your preferred bone broth powder
- (Optional) Add pasta or extra vegetables for a more filling meal
Methods
- In a large pot, heat olive oil over medium heat, and sweat the chopped onions and garlic in oil until fragrant and translucent.
- Add carrots, celery and spices and cook for a further 5 minutes, stirring occasionally.
- Add herbs, seasonings, vinegar, chicken, water, bone broth base and cook on medium for about 10 minutes, or until other vegetables have softened.
