Cherry Bakewell Quinoa Breakfast Parfaits

This is a delicious breakfast recipe to make ahead of time so you can quickly grab it in the morning. Quinoa is full of protein, so its a great way to start the day!

Ingredients

1 cup frozen cherries
1 tablespoon maple syrup, or sweetener of choice
2 tablespoons water
1 cup cooked quinoa (1/2 cup dried quinoa with 1 cup water)
1 cup yoghurt
2 teaspoons maple syrup, or to taste
¼ teaspoon vanilla powder or extract
2-3 tablespoons almond butter
2 tablespoons toasted flaked almonds

Methods

  1. First, cook your quinoa- Add 1 cup water to the 1/2 cup quinoa in a pot. Turn the heat up to high, and bring it to a boil. Once it has reached a full boil, turn the heat down to medium-low, place the lid on the saucepan, and simmer the quinoa for 15 minutes, or until all of the water is absorbed
  2. In a small pan combine the frozen cherries, maple syrup and water. Cook over a medium heat, stirring frequently and squashing the cherries down a little, until syrupy. This should take 5-10 minutes.
  3. In a medium bowl, stir together the cooked quinoa, yoghurt, maple syrup and vanilla powder/extract.
  4. In two jars, layer up your parfaits. Start with ¼ of the quinoa yoghurt mixture in each jar, followed by a couple of teaspoons of almond butter. Layer ¼ of the cherries into each jar.
  5. Repeat with the remaining quinoa yoghurt mixture, almond butter and cherries. Top each jar with 1 tablespoon of toasted flaked almonds and dig in!
