Drain well.Combine the rinsed quinoa and water in a saucepan. Bring the mixture to a boil over medium-high heat, then decrease the heat a bit to maintain a gentle simmer and add salt, pepper, turmeric, smoked paprika, dried onion flakes and garlic powder. Cook until the quinoa has absorbed all of the water, about 10 to 20 minutes. Set aside.Heat a frying pan over a medium low heat and 2 tsp olive oil and add the onion and garlic cloves first until soft. Then add zucchini, capsicum, carrot and a pinch of salt and pepper and cook stirring occasionally. Remove from the pan and place in a large bowl together with the cooked quinoa and mix well. Add a bit of water to your chickpea flour and stir, then add to your mixture and integrate well.
