Xanthan gum is derived from Corn. It is used as a thickening agent and can prevent separation of ingredients. It is commonly used in gluten free baking, but can also be used in dressings, sauces and ice cream. Xanthan gum is produced via fermentation. After this it is dried and ground into a powder to be used in recipes. If you mix Xanthan gum with water, it turns into a thick gel.

How to Use

In gluten friendly baking, the gluten is missing, which can sometimes make baking fall apart. Xanthan gum keeps the gluten friendly flour bound together, and creates some elasticity and structure in your baking. Use around ¼- ½ teaspoon of Xanthan gum per cup of flour. If you are baking something that needs a bit more structure you can use a little more, but be careful as too much can making your baking sticky. Use Xanthan gum in your favourite Gluten friendly recipes such as Bread, Pizza dough, cakes, muffins and doughnuts.
